Because I work full time and I never know what kind of weekend I'm going to have. I have to make a lot of food at one time, so i have plenty of advance notice to make more if needed. I did not take many pictures because it was a little Chaotic (yes this is normal in my house).
Sweet Potatoes on left
2. Place in a 410 degree oven and bake for 50 minutes or until soft
3. Remove skins by slitting the sweet potato lengthwise then scoop out the "meat" into the blender.
4. I don’t add very much water at this point. I leave it condensed. Puree for about 5 mins, I do stop and stir the sweet potatoes off the sides a couple times. I aim for a little runnier then mash potatoes.
Butternut Squash on right
1. Cut butternut squash in half, scoop out seeds
2. Place halves face down in a pan and cover with an inch of water
3. Bake in a 410 degree oven for 50 minutes

3. Bake in a 410 degree oven for 50 minutes
4. I scooped the squash “meat” out of the shell while it was still hot, but you may want to wait till it cools.
5. Again, I puree for about 5 minutes, stopping a couple times to stir in the sides. I did not need to add any water to this one.

To freeze it I poured each into my cupcake pan. Put it in the freezer for about an hour. I had to run a little hot water on the back to get the block of frozen puree to pop out. I labeled Ziploc bags with the veggie and the date I made them.
When I'm ready to feed the baby, I put a block in a cup with a little water (if your BFing you can use Breastmilk) and steam it in my bottle warmer. It’s ready in minutes and JC healthy organic baby food for pennies a meal.
